- 4 large russet potatoes
- 1 cup shredded cheddar cheese
- 1/2 cup turkey bacon, cooked and crumbled
- 1 cup taco meat
- 1/4 cup sour cream
- 1/4 cup diced green onions
- 1 teaspoon taco seasoning
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 400°F (200°C).
- Wash and scrub the potatoes, then poke holes in them with a fork.
- Rub the potatoes with olive oil and sprinkle with salt.
- Bake potatoes in the preheated oven for 45 minutes, or until tender.
- Remove from the oven and let cool slightly before slicing them open.
- Fluff the insides with a fork and sprinkle with taco seasoning.
- Add the taco meat, turkey bacon, and cheddar cheese on top.
- Return to the oven for an additional 10 minutes, or until the cheese is melted.
- Top with sour cream and green onions before serving.
Notes
- Feel free to customize toppings based on your preference.
- For a spicier kick, add jalapeños.
