Ingredients

  • 4 large russet potatoes
  • 1 cup shredded cheddar cheese
  • 1/2 cup turkey bacon, cooked and crumbled
  • 1 cup taco meat
  • 1/4 cup sour cream
  • 1/4 cup diced green onions
  • 1 teaspoon taco seasoning
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash and scrub the potatoes, then poke holes in them with a fork.
  3. Rub the potatoes with olive oil and sprinkle with salt.
  4. Bake potatoes in the preheated oven for 45 minutes, or until tender.
  5. Remove from the oven and let cool slightly before slicing them open.
  6. Fluff the insides with a fork and sprinkle with taco seasoning.
  7. Add the taco meat, turkey bacon, and cheddar cheese on top.
  8. Return to the oven for an additional 10 minutes, or until the cheese is melted.
  9. Top with sour cream and green onions before serving.
