- 2 cups all-purpose flour

- 1/2 teaspoon baking soda

- 1/2 cup unsalted butter, softened
- 1 1/2 cups granulated sugar
- 3 large eggs
- 2 teaspoons vanilla extract
- 1 cup buttermilk
- 2 cups fresh cherries, pitted and halved
- 1 cup cherry preserves
Instructions
- Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In a separate bowl, beat the butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition. Stir in vanilla.
- Gradually add the dry ingredients, alternating with buttermilk until well combined.
- Fold in the cherries. Divide the batter between the prepared pans.
- Bake for 30-35 minutes or until a toothpick comes out clean. Allow to cool.
- For the cherry buttercream, beat together butter and cherry preserves until smooth.
- Once the cakes are cool, spread the cherry buttercream between the layers and on top.
Notes
- For a more intense cherry flavor, consider adding cherry extract to the buttercream.
- This cake pairs well with a scoop of vanilla ice cream.
