Instructions
- Preheat the oven to 325°F (160°C).
- In a mixing bowl, blend the crushed pistachios and cream cheese until smooth.
- Add sugar, vanilla extract, and mix well.
- Beat in the eggs one at a time until fully incorporated.
- In a separate bowl, combine cherry pie filling, cornstarch, sour cream, lemon juice, and salt.
- Pour the cream cheese mixture into a springform pan and top with the cherry filling.
- Bake for 60 minutes or until set and slightly golden.
- Let it cool, then refrigerate for at least 4 hours before serving.
Notes
- For best results, allow the cheesecake to sit overnight in the fridge before serving.
- Garnish with additional crushed pistachios and cherries if desired.
