Ingredients

  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup sour cream
  • ½ cup pistachios, chopped
  • 1 cup cherry pie filling

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a medium bowl, combine graham cracker crumbs and melted butter to form the crust. Press into the bottom of a springform pan.
  3. In a large bowl, beat the cream cheese and sugar until smooth. Add vanilla extract.
  4. Add eggs one at a time, mixing well after each addition. Stir in sour cream and chopped pistachios.
  5. Pour the cream cheese mixture over the crust in the springform pan.
  6. Bake for 55-60 minutes or until the center is set. Let it cool and then refrigerate for at least 4 hours.
  7. Before serving, top with cherry pie filling.

  • For a firmer cheesecake, refrigerate overnight.
  • Switch out cherry pie filling for fresh cherries for a lighter option.
