Instructions
- In a large skillet, heat olive oil over medium heat. Add chicken thighs and brown on both sides.
- Add minced garlic and cook for 1 minute.
- Pour in chicken broth and bring to a boil. Reduce heat and let simmer for 20 minutes.
- Remove chicken and stir in flour to thicken the gravy.
- For the mashed potatoes, boil potatoes until tender. Drain and mash with milk and cheese until creamy.
- Serve chicken topped with gravy alongside cheesy mashed potatoes.
