- 4 chicken breasts
- 2 pounds baby potatoes
- 4 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup grated Parmesan cheese
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine olive oil, garlic, Italian seasoning, salt, and pepper.
- Add the potatoes and toss to coat.
- Spread the potatoes in a single layer on a baking sheet and bake for 25 minutes.
- While the potatoes are baking, season the chicken breasts with salt and pepper.
- In a skillet over medium heat, cook the chicken breasts until golden brown, about 5-7 minutes per side.
- In the last 10 minutes of cooking, add the heavy cream and Parmesan cheese to the skillet and stir until combined.
- Once the potatoes are done, add them to the skillet with the chicken and sauce, stirring gently to combine.
- Serve warm and enjoy!
Notes
- For extra flavor, marinate the chicken in the garlic mixture for a few hours before cooking.
