- 2 cups cooked rice
- 4 strips turkey bacon
- 1 cup chicken ham, diced
- 1 cup mixed vegetables (peas, carrots, corn)
- 2 eggs, beaten
- 3 tablespoons soy sauce
- 2 tablespoons green onions, chopped
- 1 tablespoon sesame oil
- 1 teaspoon garlic, minced
Instructions
- In a large skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
- In the same skillet, add sesame oil and sauté garlic until fragrant.
- Add mixed vegetables and chicken ham, cooking until heated through.
- Push the mixture to one side of the skillet and pour in the beaten eggs, scrambling them until fully cooked.
- Add the cooked rice, soy sauce, and green onions. Stir to combine and heat through.
- Add the chopped turkey bacon back into the skillet and mix well. Serve hot.
Notes
- For a spicier version, add some red pepper flakes.
- Feel free to substitute or add vegetables as desired.
