  • 2 cups cooked rice
  • 4 strips turkey bacon
  • 1 cup chicken ham, diced
  • 1 cup mixed vegetables (peas, carrots, corn)
  • 2 eggs, beaten
  • 3 tablespoons soy sauce
  • 2 tablespoons green onions, chopped
  • 1 tablespoon sesame oil
  • 1 teaspoon garlic, minced

Instructions

  1. In a large skillet, cook the turkey bacon until crispy. Remove and chop into pieces.
  2. In the same skillet, add sesame oil and sauté garlic until fragrant.
  3. Add mixed vegetables and chicken ham, cooking until heated through.
  4. Push the mixture to one side of the skillet and pour in the beaten eggs, scrambling them until fully cooked.
  5. Add the cooked rice, soy sauce, and green onions. Stir to combine and heat through.
  6. Add the chopped turkey bacon back into the skillet and mix well. Serve hot.

Notes

  • For a spicier version, add some red pepper flakes.
  • Feel free to substitute or add vegetables as desired.
