Instructions
- Cook the udon noodles according to the package instructions and set aside.
- In a large pot, heat sesame oil over medium heat and add garlic and ginger, sautéing until fragrant.
- Add the sliced chicken and cook until browned and cooked through.
- Add the broth, soy sauce, carrots, and bell pepper to the pot. Bring to a simmer.
- Add the cooked udon noodles and green onions, stirring to combine.
- Let it cook for another 2-3 minutes and serve warm.

- Feel free to add your favorite vegetables to the dish.
- Adjust the soy sauce to taste for a saltier flavor.
