- 2 cups whole milk
- 1 cup heavy cream
- 1 cup granulated sugar
- 1/2 cup unsweetened cocoa powder
- 4 large egg yolks
- 1 teaspoon vanilla extract
- 1/4 teaspoon salt
Instructions
- In a saucepan, combine the milk, cream, sugar, cocoa powder, and salt. Heat over medium heat until the mixture is warm but not boiling.
- In a separate bowl, whisk together the egg yolks. Gradually add a small amount of the warm chocolate mixture to the egg yolks, whisking constantly to temper the yolks.
- Slowly pour the tempered egg mixture back into the saucepan while whisking. Continue to cook, stirring constantly, until the mixture thickens and coats the back of a spoon.
- Remove from heat and stir in the vanilla. Strain the custard through a fine-mesh sieve into a bowl to remove any lumps.
- Cover with plastic wrap, making sure it touches the surface of the custard to prevent a skin from forming. Refrigerate for at least 2 hours or until chilled.
- Serve chilled in cups, garnished with whipped cream or chocolate shavings if desired.
Notes
- For a richer flavor, use dark chocolate instead of cocoa powder.
- This custard can be made a day in advance for convenience.
