Ingredients

  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 cup granulated sugar
  • 1/2 cup unsweetened cocoa powder
  • 4 large egg yolks
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Instructions

  1. In a saucepan, combine the milk, cream, sugar, cocoa powder, and salt. Heat over medium heat until the mixture is warm but not boiling.
  2. In a separate bowl, whisk together the egg yolks. Gradually add a small amount of the warm chocolate mixture to the egg yolks, whisking constantly to temper the yolks.
  3. Slowly pour the tempered egg mixture back into the saucepan while whisking. Continue to cook, stirring constantly, until the mixture thickens and coats the back of a spoon.
  4. Remove from heat and stir in the vanilla. Strain the custard through a fine-mesh sieve into a bowl to remove any lumps.
  5. Cover with plastic wrap, making sure it touches the surface of the custard to prevent a skin from forming. Refrigerate for at least 2 hours or until chilled.
  6. Serve chilled in cups, garnished with whipped cream or chocolate shavings if desired.

Notes

  • For a richer flavor, use dark chocolate instead of cocoa powder.
  • This custard can be made a day in advance for convenience.
