- 4 large bell peppers
- 1 cup cooked quinoa
- 6 ounces turkey bacon, chopped
- 1 cup diced chicken ham
- 1 can diced tomatoes
- 1 teaspoon Italian seasoning
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 cup shredded cheese (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove the seeds.
- In a skillet, cook the turkey bacon until crispy. Add diced chicken ham, cooked quinoa, diced tomatoes, and seasonings. Stir to combine.
- Stuff each bell pepper with the mixture and top with cheese if desired.
- Place stuffed peppers in a baking dish and cover with foil.
- Bake for 30-35 minutes, then remove foil and bake for an additional 10 minutes until the peppers are tender.
Notes
- Feel free to customize the stuffing with your favorite ingredients.
- For a vegetarian option, omit the turkey bacon and chicken ham.
