Ingredients

  • 1 cup cooked quinoa
  • 6 ounces turkey bacon, chopped
  • 1 cup diced chicken ham
  • 1 can diced tomatoes
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 cup shredded cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Cut the tops off the bell peppers and remove the seeds.
  3. In a skillet, cook the turkey bacon until crispy. Add diced chicken ham, cooked quinoa, diced tomatoes, and seasonings. Stir to combine.
  4. Stuff each bell pepper with the mixture and top with cheese if desired.
  5. Place stuffed peppers in a baking dish and cover with foil.
  6. Bake for 30-35 minutes, then remove foil and bake for an additional 10 minutes until the peppers are tender.
