- 1 cup semolina
- 1 cup coconut milk
- 1 cup shredded coconut
- 3/4 cup granulated sugar
- 1/2 cup all-purpose flour
- 1/4 cup unsalted butter, melted
- 1 teaspoon baking powder

- 1/4 teaspoon salt
Instructions
- Preheat the oven to 350°F (175°C) and grease a baking pan.
- In a mixing bowl, combine semolina, sugar, baking powder, and salt.
- Add melted butter and coconut milk to the dry ingredients, mixing well.
- Fold in shredded coconut and vanilla extract.
- Pour the batter into the prepared baking pan.
- Bake for 30-35 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool before serving.
Notes
- For added flavor, you can sprinkle some extra shredded coconut on top before baking.
- Serve with a scoop of vanilla ice cream for a delightful treat.
