- 1 cup all-purpose flour
- 1/2 cup unsalted butter, softened
- 1 cup sugar
- 2 large eggs
- 2 teaspoons vanilla extract
- 1/2 cup confetti sprinkles
- 1/2 cup milk
- 1 cup chocolate chips
- 1 cup frosting (your choice)
- 1/4 cup chocolate ganache
Instructions
- Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
- In a large bowl, cream together the butter and sugar until light and fluffy.
- Add eggs one at a time, mixing well after each addition, then stir in the vanilla.
- In a separate bowl, combine the flour and baking powder.
- Gradually add the dry ingredients to the creamed mixture alternately with the milk, starting and ending with the flour mixture.
- Fold in the confetti sprinkles and chocolate chips.
- Divide the batter evenly among the prepared muffin cups.
- Bake for 18-20 minutes or until a toothpick comes out clean.
- Let cool completely before frosting and adding ganache.
Notes
- For extra decoration, add more sprinkles on top of the ganache.
- These cupcakes can be made ahead and frozen.
