Ingredients

  • 1 cup all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1 cup sugar
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 1/2 cup confetti sprinkles
  • 1/2 cup milk
  • 1 cup chocolate chips
  • 1 cup frosting (your choice)
  • 1/4 cup chocolate ganache

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, cream together the butter and sugar until light and fluffy.
  3. Add eggs one at a time, mixing well after each addition, then stir in the vanilla.
  4. In a separate bowl, combine the flour and baking powder.
  5. Gradually add the dry ingredients to the creamed mixture alternately with the milk, starting and ending with the flour mixture.
  6. Fold in the confetti sprinkles and chocolate chips.
  7. Divide the batter evenly among the prepared muffin cups.
  8. Bake for 18-20 minutes or until a toothpick comes out clean.
  9. Let cool completely before frosting and adding ganache.

Notes

  • For extra decoration, add more sprinkles on top of the ganache.
  • These cupcakes can be made ahead and frozen.
