- 8 ounces rotini pasta
- 4 slices turkey bacon
- 1 cup cherry tomatoes, halved
- 1 cup cucumber, diced
- 1/2 cup red onion, finely chopped
- 1/4 cup mayonnaise
- 1 tablespoon Dijon mustard
- Salt to taste
- Pepper to taste
Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a skillet, cook the turkey bacon until crispy, then chop into pieces.
- In a large bowl, combine the cooked pasta, turkey bacon, cherry tomatoes, cucumber, and red onion.
- In a separate bowl, mix together the mayonnaise, Dijon mustard, salt, and pepper.
- Pour the dressing over the pasta mixture and toss to combine.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Feel free to add other vegetables like bell peppers or carrots for extra crunch.
- This salad can also be made a day in advance for better flavor.
