- 1 cup graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 1 teaspoon vanilla extract
- 3 large eggs
- 2 cups fresh or frozen cranberries
- 1 tablespoon cornstarch
Instructions
- Preheat your oven to 325°F (163°C).
- In a medium bowl, combine the graham cracker crumbs and melted butter until mixed well. Press this mixture into the bottom of a greased 9x13 inch pan.
- In a large mixer bowl, beat the cream cheese until smooth. Add the sugar and vanilla, mixing until fluffy.
- Add the eggs one at a time, mixing well after each addition.
- Toss the cranberries with the cornstarch then gently fold them into the cheesecake mixture.
- Pour the cheesecake batter over the crust and spread evenly.
- Bake for about 40-45 minutes, or until the center is set.
- Allow to cool completely before slicing into bars.
Notes
- For best results, use fresh cranberries. If using frozen, thaw and drain them before adding to the cheesecake mix.
- These bars can be served chilled or at room temperature.
