Ingredients

  • 1 cup graham cracker crumbs
  • 1/2 cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 3 large eggs
  • 2 cups fresh or frozen cranberries
  • 1 tablespoon cornstarch

Instructions

  1. Preheat your oven to 325°F (163°C).
  2. In a medium bowl, combine the graham cracker crumbs and melted butter until mixed well. Press this mixture into the bottom of a greased 9x13 inch pan.
  3. In a large mixer bowl, beat the cream cheese until smooth. Add the sugar and vanilla, mixing until fluffy.
  4. Add the eggs one at a time, mixing well after each addition.
  5. Toss the cranberries with the cornstarch then gently fold them into the cheesecake mixture.
  6. Pour the cheesecake batter over the crust and spread evenly.
  7. Bake for about 40-45 minutes, or until the center is set.
  8. Allow to cool completely before slicing into bars.

Notes

  • For best results, use fresh cranberries. If using frozen, thaw and drain them before adding to the cheesecake mix.
  • These bars can be served chilled or at room temperature.
