Ingredients

  • 1/2 cup unsalted butter, melted

  • 1 teaspoon vanilla extract
  • 4 large eggs
  • 1 cup fresh cranberries
  • 1/4 cup orange juice

Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
  3. Press the mixture into the bottom of a 9-inch pie pan.
  4. In another bowl, beat cream cheese, sugar, and vanilla extract until smooth.
  5. Add eggs one at a time, beating well after each addition.
  6. Pour the cream cheese mixture over the crust in the pie pan.
  7. Bake for 50-60 minutes or until the center is set.
  8. In a saucepan, combine cranberries and orange juice, cook until cranberries pop.
  9. Spread the cranberry mixture over the cooled cheesecake.
  10. Chill in the refrigerator for at least 4 hours before serving.

Notes

  • For a sweeter pie, add more sugar to the cranberry topping.
