- 1 1/2 cups graham cracker crumbs
- 1/4 cup sugar
- 1/2 cup unsalted butter, melted
- 2 (8 oz) packages cream cheese, softened
- 1 cup sugar
- 1 teaspoon vanilla extract
- 4 large eggs
- 1 cup fresh cranberries
- 1/4 cup orange juice
Instructions
- Preheat the oven to 325°F (163°C).
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined.
- Press the mixture into the bottom of a 9-inch pie pan.
- In another bowl, beat cream cheese, sugar, and vanilla extract until smooth.
- Add eggs one at a time, beating well after each addition.
- Pour the cream cheese mixture over the crust in the pie pan.
- Bake for 50-60 minutes or until the center is set.
- In a saucepan, combine cranberries and orange juice, cook until cranberries pop.
- Spread the cranberry mixture over the cooled cheesecake.
- Chill in the refrigerator for at least 4 hours before serving.
Notes
- For a sweeter pie, add more sugar to the cranberry topping.
- Serve with whipped cream for extra indulgence.
