Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, combine spinach, cranberries, goat cheese, and garlic.
- Slice a pocket in each chicken breast and stuff with the mixture.
- Season the chicken with olive oil, salt, and pepper.
- Place stuffed chicken breasts on a baking sheet.
- Bake for 25-30 minutes or until the chicken is cooked through.
