Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the zucchinis in half lengthwise and scoop out the center.
  3. In a bowl, mix burrata cheese, garlic, salt, pepper, and basil.
  4. Stuff the zucchini halves with the burrata mixture.
  5. Place cherry tomatoes around the zucchini in a baking dish.
  6. Drizzle olive oil over the zucchini and tomatoes.
  7. Bake for 25-30 minutes until zucchinis are tender and the cheese is melted.
  8. Serve warm, garnished with additional basil if desired.
