- 4 medium zucchinis
- 8 ounces burrata cheese
- 1 cup cherry tomatoes
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup fresh basil, chopped
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the zucchinis in half lengthwise and scoop out the center.
- In a bowl, mix burrata cheese, garlic, salt, pepper, and basil.
- Stuff the zucchini halves with the burrata mixture.
- Place cherry tomatoes around the zucchini in a baking dish.
- Drizzle olive oil over the zucchini and tomatoes.
- Bake for 25-30 minutes until zucchinis are tender and the cheese is melted.
- Serve warm, garnished with additional basil if desired.
Notes
- The addition of red pepper flakes can give a spicy kick.
- These rolls pair well with crusty bread.
