- 1 pound potatoes, diced
- 2 cups cooked chicken, shredded
- 1 cup diced ham
- 4 cups chicken broth
- 1 cup heavy cream
- 1 medium onion, chopped
- 2 garlic cloves, minced
- 2 tablespoons olive oil
- 1 teaspoon dried thyme
- Salt and pepper to taste
Instructions
- In a large pot, heat olive oil over medium heat. Add the onion and garlic, and sauté until softened.
- Add the diced potatoes, chicken, ham, chicken broth, and thyme to the pot. Bring to a boil, then reduce heat and simmer until potatoes are tender.
- Stir in the heavy cream and season with salt and pepper. Allow to heat through before serving.
Notes
- For added flavor, consider using smoked ham.
- This soup can be made ahead of time and reheats well.
