- 1 tablespoon olive oil
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1/4 cup all-purpose flour
- 4 cups seafood stock
- 1 cup heavy cream
- 1 tablespoon tomato paste
- 1 teaspoon Old Bay seasoning
- 1 pound lump crab meat
- Salt to taste
- Black pepper to taste
Instructions
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, and sauté until soft.
- Stir in the flour and cook for 1-2 minutes.
- Add the seafood stock gradually, whisking to avoid lumps.
- Bring to a simmer and stir in the heavy cream and tomato paste.
- Add Old Bay seasoning, salt, and pepper to taste.
- Stir in the lump crab meat and cook for an additional 5 minutes.
- Serve hot, garnished with fresh herbs if desired.
Notes
- This bisque can be made in advance and reheated gently.
- For a spicier version, add a pinch of cayenne pepper.
