Instructions
- In a saucepan, heat the heavy cream until it just begins to simmer.
- Remove from heat and add the chopped white chocolate, stirring until melted.
- Stir in the lemon juice, lemon zest, and vanilla extract until well combined.
- Refrigerate the mixture for about 2 hours or until firm.
- Once firm, scoop out small amounts and roll into balls.
- Roll the truffles in crushed graham crackers.
- Chill again before serving.
