- 4 boneless, skinless chicken breasts
- 1 cup cremini mushrooms, chopped
- 1/2 cup cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté the mushrooms and garlic until softened.
- In a bowl, combine the sautéed mushrooms with cream cheese, Parmesan cheese, and thyme; season with salt and pepper.
- Cut a pocket into each chicken breast and stuff them with the mushroom mixture.
- Place the stuffed chicken breasts in a baking dish and bake for 25-30 minutes, or until cooked through.
Notes
- For added flavor, consider adding spinach to the mushroom mixture.
- Let the chicken rest for a few minutes before serving to retain juices.
