- 1 cup polenta
- 4 cups water
- 1 teaspoon salt
- 1 pound beef sausage, casing removed
- 1 can (14 ounces) crushed tomatoes
- 1 medium onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- 1 tablespoon olive oil
- 1 tablespoon fresh basil, chopped
- 1/4 cup grated Parmesan cheese
Instructions
- In a large pot, bring water and salt to a boil.
- Slowly whisk in the polenta, reducing heat to low.
- Cook for 30 minutes, stirring frequently.
- In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
- Add the beef sausage and cook until browned.
- Stir in crushed tomatoes and Italian seasoning, simmer for 15 minutes.
- Once polenta is thick and creamy, stir in Parmesan cheese.
- Serve polenta topped with the sausage and tomato sauce, garnished with fresh basil.
Notes
- For a vegetarian version, substitute sausage with lentils or mushrooms.
- This dish can be made ahead and reheated.
