  • 4 cups water
  • 1 teaspoon salt
  • 1 pound beef sausage, casing removed
  • 1 can (14 ounces) crushed tomatoes
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • 1 tablespoon olive oil
  • 1 tablespoon fresh basil, chopped
  • 1/4 cup grated Parmesan cheese

Instructions

  1. In a large pot, bring water and salt to a boil.
  2. Slowly whisk in the polenta, reducing heat to low.
  3. Cook for 30 minutes, stirring frequently.
  4. In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until softened.
  5. Add the beef sausage and cook until browned.
  6. Stir in crushed tomatoes and Italian seasoning, simmer for 15 minutes.
  7. Once polenta is thick and creamy, stir in Parmesan cheese.
  8. Serve polenta topped with the sausage and tomato sauce, garnished with fresh basil.
