- 1 pound shrimp, peeled and deveined
- 1 large avocado, diced
- 1 cup cherry tomatoes, halved
- 1/4 cup red onion, finely chopped
- 1/4 cup cilantro, chopped
- 1/2 cup mayonnaise
- 2 tablespoons lime juice
- Salt to taste
- Black pepper to taste
Instructions
- In a large pot, bring water to a boil and add the shrimp. Cook for 2-3 minutes or until they turn pink.
- Drain the shrimp and let them cool.
- In a large bowl, combine the cooled shrimp, avocado, cherry tomatoes, red onion, and cilantro.
- In a separate bowl, whisk together the mayonnaise, lime juice, salt, and pepper.
- Fold the dressing into the shrimp mixture until everything is well coated.
- Chill in the refrigerator for at least 30 minutes before serving.
Notes
- Serve on a bed of lettuce or in a tortilla for a delicious wrap.
- Feel free to add additional ingredients like cucumber or bell peppers for extra crunch.
