- 4 boneless, skinless chicken breasts
- 1 cup fresh spinach, chopped
- 1/2 cup cream cheese, softened
- 1/2 cup sun-dried tomatoes, chopped
- 1/4 cup mozzarella cheese, shredded
- 2 cloves garlic, minced
- 1 teaspoon Italian seasoning
- Salt and Pepper to taste
- 2 tablespoons olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a bowl, mix the spinach, cream cheese, sun-dried tomatoes, mozzarella, garlic, Italian seasoning, salt, and pepper.
- Cut a pocket in each chicken breast and stuff with the spinach mixture.
- Heat olive oil in a skillet over medium heat and sear the chicken for 4-5 minutes on each side until golden brown.
- Transfer the chicken to a baking dish and bake for 20-25 minutes or until cooked through.
- Let rest for a few minutes before serving.
Notes
- For added flavor, marinate the chicken in Italian seasoning and olive oil for a few hours.
- Serve with a side salad or garlic bread.
