Instructions
- Cook the pasta according to package instructions. Drain and set aside.
- In a large pan, heat olive oil over medium heat. Add minced garlic and sauté until fragrant.
- Add the mixed vegetables and cook until tender, about 5-7 minutes.
- Reduce heat to low and stir in the heavy cream and Parmesan cheese until melted and combined.
- Add the cooked pasta to the creamy vegetable mixture and toss to combine.
- Season with salt and pepper to taste.
- Serve warm, garnished with additional Parmesan if desired.
