- 4 large potatoes

Instructions
- Preheat the oven to 400°F (200°C).
- Peel and thinly slice the potatoes.
- In a skillet, heat olive oil over medium heat and cook the onions until translucent.
- Add the sliced potatoes and cook until tender, about 15 minutes.
- In a bowl, whisk the eggs and stir in the cheese, salt, and pepper.
- Pour the egg mixture over the potatoes in the skillet and let it cook for about 5 minutes.
- Transfer the skillet to the oven and bake until the frittata is set and the top is golden brown, about 15-20 minutes.
- Remove from oven, let cool slightly, and slice before serving.
