- 2 pounds baby potatoes
- 1 cup feta cheese
- 1/2 cup heavy cream
- 1/4 cup chili honey
- 1/4 cup olive oil
- 1 teaspoon garlic powder
- Salt to taste
- Black pepper to taste
- Fresh herbs for garnish
Instructions
- Preheat oven to 450°F (232°C).
- Boil the baby potatoes in salted water until tender, about 15-20 minutes.
- Drain the potatoes and let them cool slightly.
- Place the potatoes on a baking sheet and gently smash each one with a fork or potato masher.
- Drizzle olive oil and season with garlic powder, salt, and black pepper.
- Roast in the oven for 25-30 minutes, or until crispy and golden brown.
- While the potatoes are roasting, in a bowl, blend the feta cheese and heavy cream until smooth and creamy.
- Once the potatoes are done, remove them from the oven and top each with whipped feta and a drizzle of chili honey.
- Garnish with fresh herbs before serving.
Notes
- For extra spice, add chili flakes to the whipped feta.
- Adjust the amount of chili honey based on your heat preference.
