- 2 cups cooked chicken, shredded
- 1 can black beans, drained and rinsed
- 1 can corn, drained
- 1 can diced tomatoes with green chilies
- 1 packet taco seasoning
- 2 cups shredded cheddar cheese
- 1 cup sour cream
- 1 cup chicken broth
- 1 bag of tortilla chips
Instructions
- Preheat the oven to 350°F (175°C).
- In a large bowl, combine the shredded chicken, black beans, corn, diced tomatoes, taco seasoning, sour cream, and chicken broth.
- Spread the mixture into a greased 9x13 inch baking dish.
- Add a layer of tortilla chips on top of the mixture.
- Sprinkle the shredded cheddar cheese over the chips.
- Bake in the preheated oven for 25-30 minutes, or until the cheese is melted and bubbly.
- Let it cool for a few minutes before serving.
Notes
- For a spicier dish, add jalapeños or use a spicy taco seasoning.
- This casserole can be made ahead of time and refrigerated before baking.
