Ingredients

- 1 cup orzo
- 2 cups water
- 1/2 cup cherry tomatoes, halved
- 1/4 cup red onion, diced
- 1/4 cup feta cheese, crumbled
- 1/4 cup fresh parsley, chopped
- 3 tablespoons olive oil
- 2 tablespoons lemon juice
- Salt to taste
- Black pepper to taste
Instructions
- Bring water to a boil in a medium pot.
- Add orzo and cook according to package instructions until al dente; drain and rinse under cold water.
- In a large bowl, combine the cooked orzo, cherry tomatoes, red onion, feta cheese, and parsley.
- In a small bowl, whisk together olive oil, lemon juice, salt, and black pepper.
- Pour dressing over the salad and toss to combine.
- Serve immediately or chill in the refrigerator for 30 minutes before serving.

- This salad can be made ahead of time and tastes even better after chilling.
