- 2 pounds fresh strawberries
- 1 vanilla bean (split and scraped)
- 4 cups granulated sugar
- 1/4 cup lemon juice
Instructions
- Wash and hull the strawberries, then chop them into quarters.
- In a large pot, combine the strawberries, lemon juice, and sugar, stirring until the sugar has dissolved.
- Add the vanilla bean and seeds to the mixture.
- Heat the mixture over medium heat until it reaches a gentle boil, then reduce the heat and let it simmer for about 30 minutes, stirring occasionally.
- To test for doneness, place a spoonful of jam on a chilled plate and run your finger through it; if it holds its shape, it’s ready.
- Remove the pot from heat, take out the vanilla bean, and pour the hot jam into sterilized jars.
- Seal the jars and allow the jam to cool completely before storing in the refrigerator.
Notes
- For a smoother jam, blend the mixture before jarring.
- Adjust the sweetness by adding more or less sugar according to your taste.
