Instructions

  1. Wash and hull the strawberries, then chop them into quarters.
  2. In a large pot, combine the strawberries, lemon juice, and sugar, stirring until the sugar has dissolved.
  3. Add the vanilla bean and seeds to the mixture.
  4. Heat the mixture over medium heat until it reaches a gentle boil, then reduce the heat and let it simmer for about 30 minutes, stirring occasionally.
  5. To test for doneness, place a spoonful of jam on a chilled plate and run your finger through it; if it holds its shape, it’s ready.
  6. Remove the pot from heat, take out the vanilla bean, and pour the hot jam into sterilized jars.
  7. Seal the jars and allow the jam to cool completely before storing in the refrigerator.
