- 4 large green tomatoes
- 1 cup cornmeal
- 1 cup all-purpose flour
- 2 large eggs
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup turkey bacon, crumbled
- 1 cup oil for frying
Instructions
- Slice the green tomatoes into 1/4 inch thick slices.
- In a shallow dish, mix the cornmeal, flour, salt, and pepper.
- In another bowl, beat the eggs.
- Dip each tomato slice first in the egg, then in the cornmeal mixture to coat.
- Heat the oil in a skillet over medium heat.
- Add the coated tomato slices and cook until golden brown, about 3-4 minutes per side.
- Once cooked, sprinkle crumbled turkey bacon on top of the tomatoes before serving.
Notes
- Serve hot with your favorite dipping sauce.
- For a spicier twist, add cayenne pepper to the cornmeal mixture.
