- 1 whole chicken
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon fresh rosemary, chopped
- 1 tablespoon fresh thyme, chopped
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 lemon, halved
Instructions
- Preheat the oven to 375°F (190°C).
- In a small bowl, mix together garlic, olive oil, rosemary, thyme, salt, and pepper.
- Rub the mixture all over the chicken, including under the skin.
- Place the lemon halves inside the cavity of the chicken.
- Place the chicken in a roasting pan and roast for 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
- Let the chicken rest for 10 minutes before carving.
Notes
- For extra flavor, add some chopped vegetables to the roasting pan.
- Serve with a side of mashed potatoes or a fresh salad.
