Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine chicken thighs, baby potatoes, minced garlic, olive oil, Italian seasoning, salt, and pepper. Toss until everything is well coated.
- Transfer the mixture to a baking dish and sprinkle grated Parmesan cheese over the top.
- Bake in the preheated oven for 35-40 minutes or until the chicken is cooked through and potatoes are tender.
- Broil for an additional 2-3 minutes for a golden, crispy top.
- Remove from the oven and let it rest for a few minutes before serving.
