Instructions
- Preheat your oven to 375°F (190°C).
- Slice the zucchinis in half lengthwise and scoop out the insides.
- In a skillet, heat olive oil and sauté garlic until fragrant.
- Add shrimp and cook until they turn pink.
- Mix in lemon juice, red pepper flakes, salt, and black pepper.
- Fill the zucchini boats with the shrimp mixture.
- Sprinkle with Parmesan cheese.
- Bake for 20 minutes or until the zucchini is tender.
