- 3 pounds chuck roast
- 2 tablespoons olive oil
- 1 large onion, chopped
- 3 cloves garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 2 teaspoons dried thyme
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 large carrots, sliced
- 2 bay leaves
Instructions
- Preheat the oven to 300°F (150°C).
- In a large Dutch oven, heat the olive oil over medium-high heat.
- Brown the chuck roast on all sides, then remove from the pot.
- Add the onions and garlic to the pot, sauté until translucent.
- Stir in the beef broth, Worcestershire sauce, thyme, salt, and pepper.
- Return the roast to the pot and add the carrots and bay leaves.
- Cover and bake for 3-4 hours, until the beef is tender.
- Remove the roast from the pot, slice and serve with the vegetables.
Notes
- For added flavor, marinate the roast overnight with seasonings.
- Serve with mashed potatoes or dumplings for a complete meal.
