Ingredients

  • 3 pounds chuck roast
  • 2 tablespoons olive oil
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons dried thyme
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • 2 large carrots, sliced
  • 2 bay leaves

Instructions

  1. Preheat the oven to 300°F (150°C).
  2. In a large Dutch oven, heat the olive oil over medium-high heat.
  3. Brown the chuck roast on all sides, then remove from the pot.
  4. Add the onions and garlic to the pot, sauté until translucent.
  5. Stir in the beef broth, Worcestershire sauce, thyme, salt, and pepper.
  6. Return the roast to the pot and add the carrots and bay leaves.
  7. Cover and bake for 3-4 hours, until the beef is tender.
  8. Remove the roast from the pot, slice and serve with the vegetables.

Notes

  • For added flavor, marinate the roast overnight with seasonings.
  • Serve with mashed potatoes or dumplings for a complete meal.
