- 4 cups chicken broth
- 1 cup diced turkey bacon
- 1 cup diced chicken ham
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 teaspoon paprika
- 1 teaspoon dried thyme
- 2 cups shredded cabbage
- 1 can (15 oz) diced tomatoes
- 1 cup cooked rice
- Salt and pepper to taste
Instructions
- In a large pot, cook turkey bacon over medium heat until crispy. Remove and set aside.
- In the same pot, add onion and garlic, sauté until onion is translucent.
- Add chicken ham, paprika, thyme, and cabbage. Cook until cabbage is softened.
- Pour in the chicken broth and diced tomatoes, bring to a boil.
- Reduce heat and simmer for 20 minutes.
- Stir in cooked rice and crispy turkey bacon, heat through.
Notes
- Feel free to add additional vegetables like carrots or bell peppers.
- This soup can be made ahead of time and tastes even better the next day.
