A delicious quick bread filled with green onions, zucchini, and cheddar cheese.

Ingredients

  • 1 cup grated zucchini
  • 1/2 cup chopped green onions
  • 1 cup shredded cheddar cheese
  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup milk
  • 1/4 cup vegetable oil
  • 2 large eggs

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the flour, baking powder, salt, and pepper.
  3. In another bowl, whisk together the milk, oil, and eggs.
  4. Add the wet ingredients to the dry ingredients and stir until just combined.
  5. Fold in the zucchini, green onions, and cheddar cheese.
  6. Pour the batter into the prepared loaf pan.
  7. Bake for 45-50 minutes, or until a toothpick inserted in the center comes out clean.
  8. Allow to cool in the pan for 10 minutes before transferring to a wire rack.
