A delicious frittata loaded with chicken ham, broccoli, spinach, and the creamy goodness of cheddar and pepper jack cheese.

Ingredients

  • 1 cup chopped broccoli
  • 1 cup fresh spinach
  • 4 large eggs
  • 1/2 cup shredded cheddar cheese
  • 1/2 cup shredded pepper jack cheese
  • 1/2 cup diced chicken ham
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat and sauté broccoli and spinach until tender.
  3. In a bowl, whisk together the eggs, salt, and pepper.
  4. Add in the cooked vegetables and cheeses, mixing well.
  5. Pour the mixture into a greased oven-safe skillet and sprinkle diced chicken ham on top.
  6. Bake for 20-25 minutes, or until the eggs are set and the top is golden.
  7. Let cool slightly before slicing and serving.
