- 1 cup chopped broccoli
- 1 cup fresh spinach
- 4 large eggs
- 1/2 cup shredded cheddar cheese
- 1/2 cup shredded pepper jack cheese
- 1/2 cup diced chicken ham
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1 tablespoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- In a skillet, heat olive oil over medium heat and sauté broccoli and spinach until tender.
- In a bowl, whisk together the eggs, salt, and pepper.
- Add in the cooked vegetables and cheeses, mixing well.
- Pour the mixture into a greased oven-safe skillet and sprinkle diced chicken ham on top.
- Bake for 20-25 minutes, or until the eggs are set and the top is golden.
- Let cool slightly before slicing and serving.
