- 1 prime rib roast, about 5-7 pounds
- 4 cloves garlic, minced
- 2 tablespoons fresh rosemary, chopped
- 2 tablespoons fresh thyme, chopped
- 2 tablespoons olive oil
- 2 teaspoons salt
- 1 teaspoon black pepper
Instructions
- Preheat the oven to 450°F (232°C).
- In a small bowl, mix the garlic, rosemary, thyme, olive oil, salt, and black pepper to form a paste.
- Rub this paste all over the prime rib roast.
- Place the roast in a roasting pan, bone-side down.
- Roast in the preheated oven for 20 minutes.
- Reduce the oven temperature to 325°F (163°C) and continue roasting until the internal temperature reaches 135°F (57°C) for medium-rare, about 1.5 to 2 hours.
- Let the roast rest for 20 minutes before slicing and serving.

- Use a meat thermometer for the best results.
- Allow the roast to reach room temperature before cooking for even results.
