  • 2 eggs

  • 1 1/2 cups diced apples
  • 4 cups vegetable oil (for frying)
  • 1 cup powdered sugar (for glaze)
  • 2 tablespoons milk (for glaze)

Instructions

  1. In a bowl, mix together flour, baking powder, salt, cinnamon, and sugar.
  2. In another bowl, combine milk, eggs, and vanilla extract.
  3. Gradually add the wet ingredients to the dry ingredients until just combined.
  4. Fold in the diced apples carefully.
  5. Heat oil in a deep frying pan over medium heat.
  6. Scoop spoonfuls of the batter and carefully drop them into the hot oil.
  7. Fry until golden brown on both sides, about 3-4 minutes.
  8. Remove from the oil and drain on paper towels.
  9. For the glaze, mix powdered sugar and milk until smooth and drizzle over warm fritters.
