- 1 cup water
- 1/2 cup unsalted butter
- 1 cup all-purpose flour

Instructions
- Preheat the oven to 400°F (200°C).
- In a saucepan, combine water and butter; bring to a boil.
- Add flour and stir until the mixture forms a ball. Remove from heat.
- Beat in the eggs one at a time until smooth.
- Drop spoonfuls of dough onto a baking sheet.
- Bake for 20-25 minutes until puffs are golden.
- In another pot, combine rhubarb and sugar; cook until tender.
- Whip the cream with vanilla until soft peaks form; fold in powdered sugar.
- Once puffs cool, fill with rhubarb mixture and whipped cream.
