Ingredients

  • 2 cups all-purpose flour
  • 3 large eggs
  • 1 cup fresh ricotta cheese
  • 1/2 cup grated Parmesan cheese
  • 1 egg yolk
  • 2 tablespoons fresh parsley, chopped
  • 2 tablespoons fresh basil, chopped
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup unsalted butter
  • 1 tablespoon fresh thyme, chopped

Instructions

  1. In a large bowl, mix the flour and eggs until a dough forms.
  2. Knead the dough for about 10 minutes until smooth.
  3. Wrap the dough in plastic wrap and let it rest for 30 minutes.
  4. In another bowl, combine the ricotta, Parmesan, egg yolk, parsley, basil, salt, and pepper.
  5. Roll the dough thin and cut it into squares.
  6. Place a spoonful of filling in the center of each square and fold to form ravioli.
  7. In a pot, bring salted water to a boil and cook ravioli for about 4 minutes.
  8. In a separate pan, melt the butter and sauté the thyme briefly.
  9. Drain the ravioli and toss with the herb butter sauce before serving.

Notes

  • Make sure the dough is not too sticky; add flour if necessary.
