- 2 cups all-purpose flour
- 3 large eggs
- 1 cup fresh ricotta cheese
- 1/2 cup grated Parmesan cheese
- 1 egg yolk
- 2 tablespoons fresh parsley, chopped
- 2 tablespoons fresh basil, chopped
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/2 cup unsalted butter
- 1 tablespoon fresh thyme, chopped
Instructions
- In a large bowl, mix the flour and eggs until a dough forms.
- Knead the dough for about 10 minutes until smooth.
- Wrap the dough in plastic wrap and let it rest for 30 minutes.
- In another bowl, combine the ricotta, Parmesan, egg yolk, parsley, basil, salt, and pepper.
- Roll the dough thin and cut it into squares.
- Place a spoonful of filling in the center of each square and fold to form ravioli.
- In a pot, bring salted water to a boil and cook ravioli for about 4 minutes.
- In a separate pan, melt the butter and sauté the thyme briefly.
- Drain the ravioli and toss with the herb butter sauce before serving.
Notes
- Make sure the dough is not too sticky; add flour if necessary.
- You can substitute other herbs according to preference.
