- 1 ½ cups pistachios, chopped
- 1 cup graham cracker crumbs
- ⅓ cup unsalted butter, melted
- 2 cups cream cheese, softened
- 1 cup granulated sugar
- 3 large eggs
- 1 teaspoon vanilla extract
- ½ cup honey
- ½ cup water
- 1 teaspoon cinnamon
Instructions
- Preheat the oven to 325°F (160°C).
- In a bowl, combine the graham cracker crumbs and melted butter.
- Press the mixture into the bottom of a springform pan.
- In a separate bowl, beat the cream cheese and sugar until smooth.
- Add the eggs one at a time, then stir in the vanilla extract.
- Pour the cream cheese mixture over the crust.
- Bake for 50-60 minutes, until the center is set.
- While baking, prepare the honey syrup by combining honey, water, and cinnamon in a saucepan.
- Bring to a boil, then let it simmer for 10 minutes.
- Once the cheesecake is cool, drizzle with honey syrup and sprinkle with chopped pistachios.
Notes
- Allow the cheesecake to chill in the refrigerator for at least 4 hours before serving.
- For a stronger honey flavor, increase the amount of honey in the syrup.
