Ingredients

  • 1 ½ cups pistachios, chopped
  • 1 cup graham cracker crumbs
  • ⅓ cup unsalted butter, melted
  • 2 cups cream cheese, softened
  • 1 cup granulated sugar
  • 3 large eggs
  • 1 teaspoon vanilla extract
  • ½ cup honey
  • ½ cup water
  • 1 teaspoon cinnamon

Instructions

  1. Preheat the oven to 325°F (160°C).
  2. In a bowl, combine the graham cracker crumbs and melted butter.
  3. Press the mixture into the bottom of a springform pan.
  4. In a separate bowl, beat the cream cheese and sugar until smooth.
  5. Add the eggs one at a time, then stir in the vanilla extract.
  6. Pour the cream cheese mixture over the crust.
  7. Bake for 50-60 minutes, until the center is set.
  8. While baking, prepare the honey syrup by combining honey, water, and cinnamon in a saucepan.
  9. Bring to a boil, then let it simmer for 10 minutes.
  10. Once the cheesecake is cool, drizzle with honey syrup and sprinkle with chopped pistachios.

Notes

  • Allow the cheesecake to chill in the refrigerator for at least 4 hours before serving.
  • For a stronger honey flavor, increase the amount of honey in the syrup.
