Instructions
- In a saucepan, combine erythritol, cocoa powder, and cornstarch.
- Gradually whisk in the almond milk and heavy cream.
- Cook over medium heat, stirring constantly until thickened.
- Remove from heat and stir in vanilla extract.
- Slice the bananas and layer them in a serving dish, pouring the chocolate pudding over the top.
- Chill in the refrigerator for at least 2 hours before serving.
