Ingredients

  • 1 ½ cups graham cracker crumbs
  • ⅓ cup granulated sugar
  • ½ cup unsalted butter, melted
  • 2 cans (14 ounces each) sweetened condensed milk
  • ¾ cup fresh key lime juice
  • 4 large egg yolks
  • ½ teaspoon lime zest
  • whipped cream for topping (optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, mix graham cracker crumbs, sugar, and melted butter until well combined.
  3. Press the mixture into the bottom of a greased 9x9 inch baking pan.
  4. Bake for 10 minutes and then allow to cool slightly.
  5. In another bowl, whisk together sweetened condensed milk, key lime juice, egg yolks, and lime zest until smooth.
  6. Pour the filling over the cooled crust.
  7. Bake for an additional 15-20 minutes until the filling is set.
  8. Let cool completely before cutting into bars.
  9. Top with whipped cream if desired.
