- 1 ½ cups graham cracker crumbs
- ½ cup sugar
- ½ cup unsalted butter, melted
- 4 large egg yolks
- 1 can (14 ounces) sweetened condensed milk
- ½ cup fresh key lime juice
- Zest of 2 key limes
- 1 cup heavy cream
- 2 tablespoons powdered sugar
Instructions
- Preheat your oven to 350°F (175°C).
- In a bowl, combine graham cracker crumbs, sugar, and melted butter. Press the mixture into the bottom of a pie dish to form the crust.
- Bake the crust for 8 to 10 minutes or until golden brown. Remove from oven and let it cool.
- In a separate bowl, whisk together egg yolks, sweetened condensed milk, lime juice, and lime zest until smooth.
- Pour the filling into the cooled crust and bake for an additional 15 minutes.
- Remove from the oven and let it cool completely, then refrigerate for at least 4 hours.
- Before serving, whip the heavy cream and powdered sugar together until soft peaks form. Spread or pipe the whipped cream on top of the pie.
Notes
- For a stronger lime flavor, add an extra tablespoon of lime juice.
- Make sure to use fresh key limes for the best taste.
