- 3 large sweet potatoes
- 4 cups fresh spinach
- 2 cups ricotta cheese
- 1 cup walnuts, chopped
- 1/2 cup dried cranberries
- 1/4 cup honey
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon olive oil
Instructions
- Preheat the oven to 375°F (190°C).
- Peel and slice the sweet potatoes thinly.
- In a pan, sauté the spinach with olive oil until wilted.
- Layer sweet potatoes, spinach, and ricotta in a baking dish.
- Repeat layers until ingredients are used.
- Mix walnuts, cranberries, and honey in a bowl.
- Spread the walnut mixture on top of the lasagna.
- Bake for 45 minutes until the sweet potatoes are tender.
Notes
- Let it cool for 10 minutes before serving.
- Can be made ahead and reheated.
