Ingredients

  • 3 large sweet potatoes
  • 4 cups fresh spinach
  • 2 cups ricotta cheese
  • 1 cup walnuts, chopped
  • 1/2 cup dried cranberries
  • 1/4 cup honey
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon olive oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Peel and slice the sweet potatoes thinly.
  3. In a pan, sauté the spinach with olive oil until wilted.
  4. Layer sweet potatoes, spinach, and ricotta in a baking dish.
  5. Repeat layers until ingredients are used.
  6. Mix walnuts, cranberries, and honey in a bowl.
  7. Spread the walnut mixture on top of the lasagna.
  8. Bake for 45 minutes until the sweet potatoes are tender.
