  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 1 cup granulated sugar
  • 4 large egg yolks
  • 1 can (14 oz) sweetened condensed milk
  • ¾ cup freshly squeezed lemon juice
  • Zest of 2 lemons
  • 1 cup heavy whipping cream
  • 2 tablespoons powdered sugar

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a pie dish.
  3. Bake the crust for 8-10 minutes until golden. Let it cool.
  4. In a mixing bowl, whisk together sugar, egg yolks, sweetened condensed milk, lemon juice, and lemon zest until smooth.
  5. Pour the lemon filling into the cooled crust and bake for an additional 15 minutes.
  6. Cool the pie at room temperature, then refrigerate for at least 3 hours.
  7. In another bowl, whip the cream and powdered sugar until soft peaks form.
  8. Spread or pipe the whipped cream over the chilled pie before serving.

Notes
