- 1 ½ cups graham cracker crumbs
- ½ cup unsalted butter, melted
- 1 cup granulated sugar
- 4 large egg yolks
- 1 can (14 oz) sweetened condensed milk
- ¾ cup freshly squeezed lemon juice
- Zest of 2 lemons
- 1 cup heavy whipping cream
- 2 tablespoons powdered sugar
Instructions
- Preheat oven to 350°F (175°C).
- In a bowl, combine graham cracker crumbs and melted butter, then press into the bottom of a pie dish.
- Bake the crust for 8-10 minutes until golden. Let it cool.
- In a mixing bowl, whisk together sugar, egg yolks, sweetened condensed milk, lemon juice, and lemon zest until smooth.
- Pour the lemon filling into the cooled crust and bake for an additional 15 minutes.
- Cool the pie at room temperature, then refrigerate for at least 3 hours.
- In another bowl, whip the cream and powdered sugar until soft peaks form.
- Spread or pipe the whipped cream over the chilled pie before serving.
Notes
- For extra lemon flavor, add more zest.
- Can be made a day ahead of serving for better flavor.
