Ingredients

  • 1 cup heavy cream
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1 cup lemon curd
  • 2 cups sponge cake, cut into cubes
  • 2 cups mixed berries (strawberries, blueberries, raspberries)

Instructions

  1. In a large bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
  2. In a trifle dish, layer half of the sponge cake cubes at the bottom.
  3. Spread half of the lemon curd over the cake layer.
  4. Add a layer of berries on top of the lemon curd.
  5. Top with half of the whipped cream mixture.
  6. Repeat the layers with the remaining ingredients, finishing with whipped cream on top.
  7. Chill in the fridge for at least 2 hours before serving.

Notes

  • For more lemon flavor, add lemon zest to the whipped cream.
  • You can use store-bought lemon curd for convenience.
