Ingredients

- 1 cup heavy cream
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
- 1 cup lemon curd
- 2 cups sponge cake, cut into cubes
- 2 cups mixed berries (strawberries, blueberries, raspberries)
Instructions
- In a large bowl, whip the heavy cream with powdered sugar and vanilla extract until soft peaks form.
- In a trifle dish, layer half of the sponge cake cubes at the bottom.
- Spread half of the lemon curd over the cake layer.
- Add a layer of berries on top of the lemon curd.
- Top with half of the whipped cream mixture.
- Repeat the layers with the remaining ingredients, finishing with whipped cream on top.
- Chill in the fridge for at least 2 hours before serving.
Notes
- For more lemon flavor, add lemon zest to the whipped cream.
- You can use store-bought lemon curd for convenience.
