Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a bowl, mix the graham cracker crumbs, sugar, and melted butter. Press into the bottom of a springform pan.
  3. In a large bowl, beat the cream cheese and sugar until smooth. Add the eggs one at a time, mixing well after each addition.
  4. Stir in the sour cream, lemon juice, lemon zest, and vanilla extract until combined.
  5. Pour the filling over the crust and bake for 50-60 minutes, or until the center is set.
  6. Meanwhile, in a clean bowl, beat the egg whites until soft peaks form. Gradually add the sugar and beat until stiff peaks form.
  7. Spread the meringue over the cheesecake and bake for an additional 10-15 minutes until the meringue is golden.
